I'm a beginner trying to design a network but I'm not sure what topology to use for my backbone?

There's a main office - the backbone- 10 branches and a production site that connects back to the main site.

extended star topology. nuff said.

How many hosts are we talking about? You'll want to get a seperate IP address for each site, including the production site and main site, so 12... If you have a class C IP address for each then you'll be using alot of switches if you have alot of hosts for each site. In that case you'll have to do alot of subnetting also.
If you have a few per site you'll possibly be able to get away with using hubs if all the info gets stored at the main site. Just be wary of the collisions, that will be your main obstacle.
