I worked at MOTO in Chicago. They had an edible menu. A pineapple infused packing peanut (yes, a real packing peanut) . They would put fruit under pressure with CO2 and when you ate it, it would fizz in your mouth. We used liquid nitrogen for a lot of our dishes. 3 menu options 5 course, 10 course, and an 18 course.

They did have a laser that we would shoot at a vanilla bean. We would hold a wine glass over it and the aroma would fill the glass before we poured the wine. We had to stop using it, the department of health said it may not be safe, LOL.
